This Christmas is all about spending time together with my family and friends. Therefore, I decided to keep cooking simple (unstressed!) and make as much in advance as possible.
Here’s my Christmas dessert; homemade Kulfi.
We fell in love with this Indian ice cream when Kuba and I went out for a date (!) to celebrate our wedding anniversary. We really liked this super-creamy, chewy texture and the lovely scent of rose water. It’s got that magical combination of taste and aroma, even thinking about it makes me want to eat again. The cardamom adds a spicy kick and the wonderful combination of nuts and vanilla really makes this dessert something beautifully different.

Put the milks and cream in a large pan and bring to the boil.
Simmer for 15 mins, stirring constantly (the mixture should be thickened and reduced).
Stir in the cardamom and vanilla extract, remove from the heat and leave to cool.
Mix in the ground nuts and pour into a freezer proof mould.
Place in the freezer for around 6-8 hours.
